GANACHE PREPARATION OF A SPONGE CAKE AND STRAIGHT EDGE COVERING IN SUGARPASTE CLASS
This course is designed for anyone who wants to learn the production of ganache, covering and producing a staright edge finish. The objective of this course is to learn how to crumb coat and prepare a sponge base, then cover with Sugarpaste in a professional way. It is hoped that students will improve their ability through self-development and expert guidance. The additional confidence gained will allow students to further their interest and progress to enjoy future courses and to ultimately become a qualified professional cake decorator.
During the lesson our senior tutor Lynda will be demonstrating and explaining the professional way to achieve a perfect smooth finish to a basic shaped sponge.
We recommend this course for any beginner or PME Diploma Student.
We provide the use of most equipment, however to keep costs to a minimum we ask that the student brings any materials required. On enrolling we will supply you with a list of requirements, alternatively we can supply if ordered on enrolment at our student discounted fee.
This course is held in our new teaching facility “The Studio”. Free Car parking is available very nearby. “The Studio” is situated within yards of the local Bus Station and Taxi Rank, with only a 5 minute walk to the Train Station.
This course is for 3.5 hours, starting at 10:00 and finishing by around 13:30.

What you need to bring:
An apron, 6" round Sponge base (3" deep), 300ml double cream, 600g milk chocolate, 6" drum and board, 8"drum xs 2, 6" round dummy (straight edge), 4lb sugarpaste, 8" box xs2, roll of parchment paper, straight side edge. We will provide the use of some equipment during the class Free refreshments are available.,
