CHOCOLATE PIPEWORK, LACE DOILIES AND WRAPS
This is an excellent course for anyone who loves chocolate .In today’s class we will be making ganache. This is a beautiful creamy chocolate coating which can be used for filling and coating cakes. You will be shown how to split, fill and professionally coat a moist 6" round sponge base. Whilst this is setting you will be shown how to temper chocolate, make piping cornets and learn how to control your piped chocolate. In the morning you will be practicing your new skill by producing chocolate off pieces and basic chocolate lace doilies, which will adorn your final project.
After lunch we will develop your piping skills and you will be shown how to flood in with chocolate and do freestyle floral paperwork. With the aid of templates (which you will construct yourself), you will produce a side wrap which envelopes your prepared ganache sponge.
There should be time for us to show you how to use prepared chocolate transfer sheets, which can be used to make wraps or cut to produce bows, ribbon loops and structured off pieces.

This course is held in our new teaching facility “The Studio”. Free Car parking is available very nearby. “The Studio” is situated within yards of the local Bus Station and Taxi Rank, with only a 5 minute walk to the Train Station.
This course is a full day starting at 10:00 and finishing around 16.00.

The course price includes everything you need including a 6" sponge base. We will provide all the ingredients, materials, use of all sugarcraft tools, equipment and refreshments. Course attendees will also receive 10% discount on items purchased in the cake decorating supplies shop on the day of your course.
